Lining up 2006 Icewine sources

Today I lined up two vineyard sources for 2006 Icewine. Since last year's Vidal was so successful, I've decided to try my hand at another vineyard and a few more varietals. Here's the plan:

Palatine Hills is supplying:
- 20 litres Vidal Icewine juice
- 20 litres Gewurztraminer Icewine juice

Watson's is supplying:
- 20 litres Vidal Icewine juice
- 13 litres Riesling-traminer Icewine juice
- 13 litres Cab Franc Icewine juice

This is quite the investment for me. Vidal is priced at $13/litre ($680) and the vinifera at $30/litre ($780) for a total financial-spanking of $1460. To offset the sting, I've lined up a couple people to take some cases off my hands once everything's in bottle.

But I'm pretty excited about this opportunity: four varietals from two vineyards should allow me plenty of experimentation room. I'm now trying to decide on what yeasts to use (probably R2 and encapsulated ProDessert BA11), what temperatures to keep fermentation at, and to figure out where I'm going to store all this stuff :) My apartment hallway is fast approaching capacity.
